Chia Pudding Recipe: Chocolate, Vanilla, or Coconut-Goji

At U-RAAW! we’re constantly trying to concoct healthy desserts that taste great, and this chia pudding recipe will not disappoint!

Why Chia?  Chia seeds absorb up to 12 times their weight in liquid, making them a great option for a perfect pudding texture.  They are also a powerful superfood that contain lots of antioxidants, fiber, protein, and omega-3 fatty acids.

Below are three of our favourite ingredient combinations along with simple preparation instructions:

Coconut-Goji Berry  (2-3 servings)

Ingredients:

  • 1 cup nut milk (coconut, hemp, almond etc.)
  • 4 tbsp raw organic chia seeds
  • 2 tbsp unsweetened dried coconut
  • 2-3 tbsp soaked organic goji berries (soak in water for 1 hour)
  • 1 tbsp sweetener (honey, stevia, xylitol) – we used organic clover honey.

Topping:  We added a little more dried coconut.  Fresh banana or dried banana chips are another nice option, but any fruit, nut, or seed will work nicely.

Dark Chocolate (2-3 servings)

Ingredients:

  • 1 cup nut milk (coconut, hemp, almond etc.)
  • 4 tbsp raw organic chia seeds
  • 1 tsp raw cacao powder
  • 8 chopped dark chocolate covered almonds
  • 1 tsp clover honey or xylitol (we used xylitol)

Topping:  Raspberry and raw organic almonds

Vanilla flavoured chia pudding

Vanilla (2-3 servings)

Ingredients:

  • 1 cup nut milk (coconut, hemp, almond etc.)
  • 4 tbsp raw organic chia seeds
  • 1tsp of raw vanilla powder, or 1/4 tsp liquid vanilla
  • 1 tbsp sweetener (honey, stevia, xylitol) – we used organic clover honey.

Topping:  Chopped raw hazelnuts

How to Prepare

Step 1 – Add all ingredients (except honey) to mixing bowl and mix thoroughly.  If you have chosen to use honey as a sweetener, do not add in until step 3.

Step 2 – Place mixture in to fridge and let sit for at least an hour.  Stir thoroughly at the 30 minute mark to ensure even consistency.

Step 3 – After an hour, remove from fridge and add your favourite toppings.  If you’ve chosen honey as a sweetener, stir it in now.

One of the nice things about this recipe is that just about any raw ingredients will work to enhance flavour, so don’t be afraid to experiment!

Here is a list of more ingredients you can use to modify / enhance the flavour:

  • Raspberries
  • Pomegranate
  • Dried banana chips
  • Chocolate chips
  • Cinnamon powder
  • Maca powder
  • Walnuts
  • Macadamia nuts
  • Protein powder

Also keep in mind that  the type of milk you use will change the overall taste of the pudding, so try the recipe with a couple of different types until you are happy with the taste.
